Thursday, 11/19 – Moroccan Chicken Casserole is a favorite among my clients. Using organic chicken thighs (bone-in) with a blend of cumin, paprika, coriander, turmeric and cinnamon gives the chicken and cauliflower rice a Moroccan twist. The spices mostly add depth of flavor, with just a little bit of heat. This recipe also calls for thin strips of red pepper and diced tomatoes.
